Ingredients:
- Chicken Pieces ( 2 per person)
- Mayonnaise (One spoon per piece)
- Potatoes (Roughly 2/3 per-person)
- Frozen vegetables* (150g per person)
- Salt.
- Oil for drizzling.
- Mixed Herbs.
- Chicken Stock*
- Flour*

Cooking Directions:
- Preheat the oven to 180 degrees celsius.
Chicken:
- Place the chicken pieces into an oven safe dish.
- Grind salt over the chicken and then top each piece of chicken with a spoon of mayonnaise.
- Use your hands and rub the mayonnaise over and around all the chicken pieces. Make sure the pieces are well covered.
- Place the Chicken in the oven for 1hr.
- Remove from oven and serve.
Potatoes:
- Peel the potatoes, cut them into quarters and place in a microwave and oven safe dish.
- Pour about 100ml of water over the potatoes and microwave for 5 min.
- Remove from microwave and drain remaining liquid. Follow by scraping/poking with a fork. This roughens the edges which adds to the crispiness.
- Drizzle with a little bit of oil and top with a bit of salt, mixed herbs and paprika.
- Place in the oven for 45 minutes or until golden brown.
- Remove from oven and serve.
Roast Vegetables(optional):
- Pour out your desired amount of frozen veg into an oven safe dish.
- Dress with a drizzle of oil and a bit of salt.
- Place in the oven for 40 minutes (varies depending on the vegetables so make sure to keep checking to ensure they don’t burn)
- Remove from the oven and serve.
Gravy:
- Remove the chicken pieces from the dish and pour all remaining liquid into a pot.
- Add half a cube of chicken stock and heat up.
- Slowly add one table spoon of flour at a time while stirring. Keep doing this until you reach your desired thickness.
- Pour over the chicken and potatoes and ENJOY!
