Chicken Stir Fry

Ingredients:

  • Chicken breasts (1 per person)*
  • Salt
  • 3 tbs Soy Sauce
  • 1 tbs Corn Starch
  • 2 tbs Water
  • 1/3 cup chicken stock in water*
  • Stir Fry Vegetables (frozen packet)
  • 2 tbs sugar (Or honey)
  • 2 tbs oil
  • 1/3 cup rice (per person)

Cooking Directions:

  1. Mix the Corn Starch, Water , Soy Sauce, Chicken stock and Sugar/Honey together in a bowl.
  2. Prepare rice.
  3. Cut the chicken breasts into 2cm cubes and fry with 1 tbs of oil. Once cooked cooked through remove from the pan.
  4. Add the remaining 1tbs of oil and then place the desired amount of vegetables from the packet in the pan. I would recommend 200g per person.
  5. Once the vegetables have defrosted and there is no longer residue water in the pan add back the chicken pieces and pour over the sauce.
  6. Reduce the heat and allow for the sauce to thicken.
  7. Once the sauce is thick, remove the pan from the stove and serve with rice.

Notes:

  • This meal can easily be vegetarian. Just remove the chicken breasts and replace the chicken stock with vegetable stock. You may also want to increase the quantity of the vegetables.
  • This dish can be served with rice or noodles.
